One of my biggest problems is that I never seem to have healthy snacks on hand when I need them. I take the time to meal prep for my breakfasts, lunches, and even my dinners, but somehow snacks always fall by the wayside. Then next thing you know, I’m hungry in the middle of the day with nothing to do but resort to the nearest vending machine, kicking myself the whole way there.

When I’m at home, I can just whip up something to eat on demand. But when I’m out and about, or just simply don’t have the time to cook, it would be nice to have nourishing snacks ready to go. So this year, I’m make big batches of things that will last me all week.

I’m kicking off my snacking resolution with these 17 big-batch recipes. They’re all healthy and packed with things like protein, fiber, and complex carbs, so they’ll keep you energized and satisfied. You’ll find shelf-stable options like granola bars and trail mix that are perfect for just tossing in your purse, as well as exciting treats that need to be refrigerated or frozen, like frozen yogurt bites and homemade pickles. Keep them at your desk, in your gym bag, in your kitchen or wherever else you know you’re going to need them in a pinch.
