One of my biggest problems is that I never seem to have healthy snacks on hand when I need them. I take the time to meal prep for my breakfasts, lunches, and even my dinners, but somehow snacks always fall by the wayside. Then next thing you know, I’m hungry in the middle of the day with nothing to do but resort to the nearest vending machine, kicking myself the whole way there.
When I’m at home, I can just whip up something to eat on demand. But when I’m out and about, or just simply don’t have the time to cook, it would be nice to have nourishing snacks ready to go. So this year, I’m make big batches of things that will last me all week.
